Due to its abundant availability, the Summer Truffle is the most popular truffle species from Hungary. Its intense and aromatic flavour is much appreciated by chefs all over the world, and its often large size and high quality texture makes it a favourite choice. It is well used fresh or for preparing sauces, pates, sausages, etc., mixed with other ingredients, for jar and canned products.
Shelf Life: 7-10 days stored at a temperature of 0-3 degrees.

Burgundy Truffle

The Burgundy Truffle is widely consumed worldwide, and it is popular since medieval times. It is easily distinguished from other truffle species by its coffee-coloured interior and intense boiled maize smell. Having a more pronounced taste then of the Summer truffle, the Burgundy truffle is intensely used raw with olive oil and fresh vegetables.

Tuber magnatum

White Truffle

The White truffle (Tuber magnatum) is also found in Hungary. Growing symbiotically with oak and poplar the fruiting period is in autumn, they can reach 12 cm diameter and 500gramms, though are usually much smaller. The flesh is pale cream or brown with white marbling. It is the Italians favourite truffle.

The Garlic truffle distinguishes itself by its garlicky fragrance similar to the white truffle, and its smooth and warty surface. It is not well known despite the fact of having the most spectacular taste between the black truffles found in Hungary; the smooth truffle places itself on the forefront of choices by true gourmands.
This truffle can be stored for the longest time.

Winter Truffle

The Winter Black Truffle shows a black-brown colour, a slightly warty surface, with a flesh that has grey colour and gets deeper by showing whitish streaking. Due to high similarity in smell and taste with the esteemed Périgord truffle, the Winter truffle is unquestionably the most appreciated species that Hungary has to offer, and priced as such.

Mattirolomyces terfezoides

Honey Truffle

Mattirolomyces terfezioides (=Terfezia terfezioides) is as sweet as saccharin (hypogeous fungus). Hungary is the only country where they occur in the Robinia pseudoacacia forest. Fruiting period lasts from August to November. Popular name is “homoki szarvasgomba”. Thanks to its sweetness and uniqueness, it is mainly used to make desserts, like sorbets, ice creams and cakes.
